Health & Wellness Wednesday - Recipes


Two recipes for you today….

First of all, a WINNER Pumpkin Muffin recipe!  No sugar, or butter.  Seeing as it is backed by Oprah, no doubt in my mind that it was going to pass the test.  I left out the chia seeds; simply because did not have on hand.  I also used a combination of oat flour and whole wheat flour instead of the white unbleached flour.  Lastly, only 1/8 cup of agave nectar (NO maple syrup) and 3/8 cup (or 1 kids cup) of applesauce.  As mix-ins, I’ve tried blueberries (wonderful!) and dark baking chocolate – 100% cocoa  (very bitter prior to baking, still somewhat bitter after)….lesson learned Kris – settle for the 60%, or simple dark chocolate chips (% not listed) next time.!


Secondly, this has become a staple in my refrigerator.  Cheaper than store bought hummus also!

Forks over Knives White Bean Red Pepper Spread (or NO OIL HUMMUS):

1 16 ounce can cannelloni beans, drained and rinsed
4 teaspoons mellow white miso (I substituted chile pepper paste because did not have miso on hand)
1 roasted red bell pepper
1 garlic clove, minced
2 tablespoons fresh lemon juice
Zest of 1 lemon
Cayenne pepper (to taste)

Puree in a food processor until smooth and creamy.
