Had baked trout for dinner this evening. Hoffmann's had dropped the fish (fresh caught) off two nights prior. Wrapped it in foil, basic seasonings (garlic, garlic powder, onion powder, lemon juice, etc). Picture doesn't look the best; sorry. Scraped the fish out though, and mixed it with the wilted spinach and tomatoes. Bit of fresh parmesan on top. Although Emmie (for the first time) decided she liked fish, salmon, just last week....she was not as fond of the trout. Pretty sure that can be attributed to the form she saw it in. Anyway, a THANK YOU to Mr. Hoffmann.

Knox College Tennis Blog is up and running also for those who wish to follow Coach Rob on his journey (beyond Coe of course!).
The tennis office now has a Keurig coffeemaker. Coach Brad went out and purchased (Dark) Hot Chocolate for himself. Apparently, he thinks this cooler weather summons the need for hot chocolate.....what will he do come December?
The lounge will soon be outfitted with a new TV, and entertainment center (picture to come). Russ spent much of today assembling.....was thankful the headache was not assigned to me, and quite appreciative of his efforts!
And for the record, my van "lecture" was not so much a lecture at all. I merely passed around a handout that listed the 14 SuperFoods, ;) I do admit to having tested the first-year class later when at Subway.....a mission to identify as many SuperFoods, and sidekicks, in the facility!
